Where It Begins
I'm Vallery — sociologist with a focus on food and sustainability, event & tourism manager, and cook on sailing boats. I founded Vallery's Galley on a simple belief that food culture needs to change to become more accessible, honest, and more respectful of nature and the farmers, fishers, and producers behind every ingredient, and to the people we share the table with.
Wave Food, my cookbook for sailors and guests, is where that belief takes shape: simple, seasonal, authentic cooking, rooted in real ingredients and real farming.

My new cookbook, written in the galley, the kitchen on a sailing boat, constant movement, equipped with not more than essentials. A week's worth of simple, honest ingredients, cooked with what is there.
The recipes are rooted in Sardinia, in the Blue Zone's ways of eating, and in years spent building relationships with farmers and producers there. People who taught me that food keeps you well, keeps you going, when it's grown the way nature intended, slowly, seasonally, as well the way I grew up.
Wave Food is about community around the table, staying connected to the land and sea from which our food comes, and cooking simply with care wherever you happen to be.
